Sticky Date Pudding with Caramel Sauce


Dinner always tastes better when there is dessert to finish with, a sticky date pudding seems like the perfect pair!


Ingredients

  • 500g dates, chopped
  • 2 ½ cups water
  • 2 tsp bicarbonate of soda
  • 250g butter
  • 1 ½ cups caster sugar
  • 2 tsp vanilla essence
  • 4 large eggs
  • 3 ½ cups self-raising flour, sifted Cream and strawberries, to serve

Caramel Sauce:

  • 2 cups brown sugar
  • 200g butter
  • 2 tsp vanilla essence
  • 1 ½ cups thickened cream

Method

  1. Place dates and water into the 28cm Dutch Oven. Bring to the boil.
  2. Remove from heat and stir in bicarbonate of soda. Let cool down.
  3. Cream butter, sugar and vanilla essence with an electric mixer until light and fluffy
  4. Beat in eggs, one at a time until combined, fold in flour
  5. Add to date mixture, do not over mix
  6. Cook on top of stove for 1 hour and 15 minutes on low heat. Take out and use the Dutch Oven to make caramel sauce

Caramel Sauce:

Place all ingredients in Dutch Oven bring to boil whilst stirring allow to thicken and simmer 5 min. Serve sticky date pudding warm with caramel sauce cream and strawberries.
