Dinner always tastes better when there is dessert to finish with, a sticky date pudding seems like the perfect pair!
Ingredients
- 500g dates, chopped
- 2 ½ cups water
- 2 tsp bicarbonate of soda
- 250g butter
- 1 ½ cups caster sugar
- 2 tsp vanilla essence
- 4 large eggs
- 3 ½ cups self-raising flour, sifted Cream and strawberries, to serve
Caramel Sauce:
- 2 cups brown sugar
- 200g butter
- 2 tsp vanilla essence
- 1 ½ cups thickened cream
Method
- Place dates and water into the 28cm Dutch Oven. Bring to the boil.
- Remove from heat and stir in bicarbonate of soda. Let cool down.
- Cream butter, sugar and vanilla essence with an electric mixer until light and fluffy
- Beat in eggs, one at a time until combined, fold in flour
- Add to date mixture, do not over mix
- Cook on top of stove for 1 hour and 15 minutes on low heat. Take out and use the Dutch Oven to make caramel sauce
Caramel Sauce:
Place all ingredients in Dutch Oven bring to boil whilst stirring allow to thicken and simmer 5 min. Serve sticky date pudding warm with caramel sauce cream and strawberries.
